Bread

The product of the first rise of my 271st batch of bread, a first rise which lifted the lid (an octagonal piece of half inch, faced chipboard) about an even half inch off the rim of the bowl, a sturdy bowl which I believe has done duty in an operating theatre in Devon in its day.

The more than five pounds of dough pushes out between the rim and the lid towards the end of its rise and the collar hardens off a little in contact with the warm air of the airing cupboard. The contracted relic of the collar can be seen middle left.

Strange how the dough, which had risen and stuck right across the lid collapses when the lid is prised off.

See https://dl.dropboxusercontent.com/u/8152054/Bread-20110120.xls for all the details.
